This simple and comforting dish is a throwback to my childhood. My Mom made this delicious pasta dish often as it was easy to make and satisfying for everyone to eat. The combination of meaty, shredded chicken and zesty red sauce is perfect with elbow or rotini pasta as the sauce and chicken morsels nestle well in the pasta crevices. The recipe for my Chicken in Red Sauce can be used with other types of pasta as well. To change things up why not try orzo pasta – kritharaki.
2 chicken breasts, precooked and shredded
1 onion, diced
2 cups tomato pulp
1/2 cup water
1/4 cup red wine
1/2 tsp smoked mild paprika
1 tsp sweet paprika
1 tsp cumin
1/8 tsp cinnamon
2 tbsp olive oil
1. Saute the onion until softened, about 2 to 3 minutes. Stir in the spices; both paprika, cumin and cinnamon and continue to saute for another couple of minutes to allow the aroma from the spices to work their magic with the onion.
2. Pour in the tomato pulp, water and red wine and begin to simmer for 5 minutes.
3. Last, add the shredded chicken into the sauce and simmer on low heat for 25 to 30 minutes.
4. Add the chicken in red sauce to your favourite pasta.
