Tilapia Wraps with QuinoaLooking for something new and simple to do with your tilapia? Look no further, I have the recipe for you. Tilapia Wraps with Avocado Spread. This is a perfect dish for hot summer nights or breezy afternoon lunches. Pair it with your favourite side dish for a satisfying meal. I served my Tilapia Wraps with Quinoa but you can pair these delicious wraps with grilled corn, basmati rice or sweet potato fries.

6 tilapia fillets

2 tbsp avocado oil

1 tsp smoked mild paprika

1 tsp cumin

1 tsp oregano

salt

pepper

6 tortillas

2 cups shredded cheddar cheese

6 tbsp Avocado Spread – 1 tbsp for each wrap

Avocado Spread

2 ripe avocados

2 cups greek yogurt

1 tbsp minced garlic

juice of 1 lime

1/2 bunch cilantro

1 tsp cumin

salt

1. Place all the ingredients for the Avocado Spread in a blender and blend until combined well. You want a nice creamy consistancy. Set aside or refrigerate. This spread can be made days ahead and can be used as a dip for vegetables or tortilla chips.

2. Preheat oven to 425 F.

3. In a small mixing bowl combine the avocado oil, paprika, cumin, oregano and salt. Set aside.

4. Line a couple of baking pans with parchment paper, lay the tilapia fillets on the parchment paper and brush the marinade generously on each fillet. Bake for 30 minutes cover with foil as not to dry out the fish. You can even barbecue the tilapia.

5. To assemble the wraps spoon on 1 tbsp of the Avocado Spread for each tortilla, followed by the fish and topped with the cheddar cheese. Fold and serve with your favourite side.
