It may not seem like it today in the GTA with all this overcast and rain, but summer is not over yet. My parents vegetable garden is still going strong with produce such as yellow beans and tomatoes. There is nothing better than slicing into an organic tomato. The flavour is that much more intense and the flesh is meaty. Throughout the other seasons I crave my Mom’s tomatoes because they are so tasty; they make even the simplest salad special. To savour garden fresh tomatoes at their best simply mix them into your favourite salad or why not make them the star vegetable all on their own. The other day, I enjoyed my parent’s garden fresh tomatoes in a simple salad. Here’s what you need: green leaf lettuce, sliced cucumbers and tomatoes, olive oil, lemon juice, apple cider vinegar and a sprinkling of good quality Parmesan Cheese.
